"Oslavje" is a field blend of Chardonnay, Sauvignon Blanc, and Pinot Grigio, co-fermented and macerated on the skins for approximately three months. Fermentation occurs spontaneously with native yeasts in large Slavonian oak vats, without temperature control or sulfur additions. The wine is then aged on its lees in 25-35 hectoliter Slavonian oak casks for about 40 months, followed by additional bottle aging before release. Bottled unfiltered and without added sulfur, it showcases a deep golden-orange hue and a complex aromatic profile of dried apricot, honey, and wild herbs. On the palate, it is full-bodied with firm tannins, balanced by a refreshing acidity and a persistent, savory finish. This wine pairs exceptionally well with rich dishes such as pork sausage, aged cheeses, and hearty vegetable stews.
