Crafted exclusively from organically farmed Pinot Noir grapes grown in Sea Smoke’s estate vineyard, the 2019 “Sea Spray” is a traditional-method Blanc de Noirs, aged en tirage for nearly four years to develop profound depth and texture. The vineyard's marine-influenced microclimate—shaped by persistent ocean fog and coastal breezes—produces fruit of remarkable freshness and structure.
Hand-harvested at night and whole-cluster pressed, the base wine undergoes primary fermentation in stainless steel and neutral French oak, followed by secondary fermentation in bottle. The extended aging on lees results in delicate autolytic notes and exceptional finesse. No dosage is added at disgorgement, preserving the wine’s purity and precision.
This sparkling Pinot Noir is a standout aperitif but also pairs beautifully with Dungeness crab, aged Gruyère, or roast chicken with herbs.
