ABOUT THIS WINE
Grapes are destemmed, then gently pressed, and put under cold maceration for 8-10 days. The process starts in January and it follows natural outdoor temperatures at this time of the year. Afterward, the temperature is increased to 24-26 ° C in order to help yeasts fermentation.
50 % of the wine is aged in new French oak barriques and 50% in big oak barrels, second passage. Then follows a refinement period in bottle of minimum 6 months

Fabio and Paolo Zenato, from Le Morette, found inspiration in the Valpolicella’s rich history and launched an ambitious project to explore the highest standard of quality in viticulture and winemaking. In the heart of Valpolicella region, at an elevation over 1,200 feet, sits their 7-hectare vineyard just above the Quintarelli estate overlooking the town of Negrar. At this special site, they create a pair of wines under the Corte Volponi label that epitomize the best this region has to offer, less than 40,000 bottles total produced.
