The 2021 Unoperuno is 100% Nebbiolo from select parcels in La Morra, where Elio Altare’s family has farmed organically for decades. The name refers to the painstaking hand-destemming process, where each grape is selected individually—an approach rarely seen in Barolo, reflecting an obsessive commitment to finesse and precision.

Fermentation occurs in open-top French oak barrels with native yeasts, followed by aging in used barriques for approximately 24 months. The wine reveals layers of red cherry, raspberry, rosewater, sweet spices, and anise. Its tannins are ultra-refined, offering structure without austerity, while the overall profile is graceful, aromatic, and intensely focused.

A modern Barolo rooted in tradition, Unoperuno bridges delicacy and depth, and pairs beautifully with truffle risotto, duck breast, or aged cheeses.
