Savigny-les-Beaune 2021 was 100% de-stemmed. Because of the frost in 2021 he wanted more elegance and did not want to risk an unhealthy stem. 30% new oak in 456L for the Savigny.
ABOUT THIS PRODUCER
Pascal Clement is not your traditional “Negociant”. His Grandfather and Father owned a domaine. Being the younger son with a 19 year age difference with his brother, they didn't align on philosophy. Pascal worked with Coche-Dury and Domaine Chanson, until he decided to start his own Garage wine in 2011. 2012 was his first Vintage, and today he has 300 barrels in his cellar. Production is 50% white and 50% red - 97% sold in export. He only owns 1 hectare of his own land, and buys fruit for the remainder of his production. He has great relationship with the growers he obtains fruit from, which allows him to focus on making extraordinary and expressive wine.
