The grapes are hand harvested, carefully selected and then crushed. Cold settling, with fermentation starting at low temperatures in temperature-controlled stainless steel tanks. The wine is aged on the lees until bottling to preserve freshness and filtered once prior to bottling.

Domaine des Coltabards is located in the municipality of Ménétréol, a plateau between Sancerre and the Loire. The estate covers seven hectares that sit mainly on Kimmeridgien and silex soil types and the vineyards are farmed using Lutte Raisonnée (sustainable farming) methods to improve the overall health of the vines and the surrounding ecosystem. Domaine Coltabards is also HVE3 Certified, which is the highest level of sustainable certification in the Haute Valeur Environnementale range.
