Drawn from the historic Le Haut-Lieu vineyard, this cuvée reflects the site’s clay-limestone soils, which lend both roundness and structure to the wine. The 2022 vintage leans toward freshness and aromatic lift, offering notes of green apple, quince, white flowers, and a delicate hint of beeswax.
As a Demi-Sec, the wine contains a moderate level of residual sugar, beautifully counterbalanced by Chenin Blanc’s naturally high acidity. The result is a harmonious expression that feels both generous and energetic, with a silky mouthfeel and precise mineral edge. Fermentation is carried out with indigenous yeasts, followed by aging on the lees in neutral barrels, preserving purity while adding subtle depth and texture.
This wine is exceptionally versatile at the table. It pairs seamlessly with spicy dishes, particularly Thai and Indian cuisine, as well as roast poultry, glazed pork, and creamy cheeses.
