ABOUT THE WINE
Crafted from 100% Chenin Blanc grown on limestone and clay soils in Montlouis-sur-Loire, Nouveau Nez is made using the ancestral méthode, bottling the juice mid-fermentation to capture natural effervescence without additives. The wine is unfined, unfiltered, and sees no dosage, offering a pure, unmasked expression of the grape and terroir. It opens with aromas of orchard fruit, crushed limestone, and a faint floral lift. On the palate, it’s textured yet electric, with crisp stone fruit, citrus blossom, and saline minerality. Harvested early to preserve vibrancy, the fruit is farmed biodynamically, and vinified with minimal intervention. Ideal as an apéritif or alongside oysters, goat cheese, or lightly spiced Southeast Asian dishes.

Both trained enologists, they have transformed the historic family property into a beacon of sustainable, terroir-driven winemaking. Certified organic and practicing biodynamics, the domaine works with a diverse palette of indigenous varieties across small, thoughtfully farmed parcels.
