ABOUT THIS WINE

Olifantsberg’s 2022 Grenache Blanc is crafted from vines grown on shale- and sandstone-rich soils at elevation, where cool mountain breezes and stony terrain combine to produce grapes with natural acidity and phenolic depth. The wine reveals restrained aromatics of quince, chamomile, preserved lemon, and crushed herbs, with subtle oak-derived spice and flinty reduction. On the palate, it shows a balance of generosity and tension—textural yet taut, with a mineral-driven core and light phenolic grip.

Grapes were hand-harvested and whole-bunch pressed, then fermented with wild yeasts. About 30% of the wine was fermented and aged in old 500L French oak barrels, while the rest matured in concrete and stainless steel to retain freshness and texture. Lees stirring was used sparingly to enhance mouthfeel without sacrificing precision. The wine spent 10 months on the lees before bottling, with no fining and minimal sulfur added.

This is a serious, structured white built for both immediate drinking and mid-term cellaring. It pairs beautifully with rich seafood dishes, grilled white asparagus, or chicken in tarragon cream sauce.
