Made from 99% Cabernet Sauvignon sourced from a certified organic vineyard in the Columbia Gorge AVA, “Pink Salt” gets its name from both its salty character and its subtly copper-rose hue. The grapes undergo an 8-hour skin soak before gentle pressing, followed by native yeast fermentation, full malolactic conversion, and aging in neutral oak and concrete egg on the lees. A dash of Ovum’s signature white blend “Big Salt” helps kick off fermentation. No fining or filtration and minimal sulfur are used. The result is a dry, mouthwatering rosé with a red wine soul—perfect with grilled pork, salmon crudo, or tomato-laced Mediterranean dishes.
