The “Signature” cuvée represents the vision of Mathias Parent, son of Anne-Françoise Gros, bringing a next-generation perspective to the family domaine. It draws from multiple parcels across the Côte d’Or—carefully selected for balance and character—with a focus on sustainable farming and restrained yields. In 2023, the vintage offered a perfect canvas: healthy fruit, moderate alcohol, and bright natural acidity.
The wine is vinified with partial whole clusters to enhance aromatic lift and texture, then aged for 12–14 months in a moderate proportion of new oak (about 25%) to preserve purity and finesse. Though labeled as a Bourgogne or regional wine, its precision and depth rival many village-level bottlings. Silky, expressive, and versatile, it pairs effortlessly with roast chicken, charcuterie, grilled salmon, or Comté.
