ABOUT THIS WINE
All Pax wines are crafted with minimal intervention: grapes are crushed by foot and hand, fermentations rely solely on native yeasts, and cellar practices are intentionally restrained.
This wine from 100% Chenin Blanc comes from Lyman Ranch in Amador County. Vineyards are planted in red granitic soils at 1,400 ft. elevation. After harvesting, the yield is whole cluster pressed before completing full malolactic fermentation using ambient yeasts. The wine is fermented and then aged in neutral French Oak and new Stockinger Austrian barrels for 10 months.

Pax and Pam moved to wine country in 1997 to create a lifestyle that involved working with wine. After a few years of tasting and sourcing wine from all over California, Pax finally found a vineyard in which he felt a kismet connection. Alder Springs Vineyard was the site and subsequently led to the launch of the PAX brand in 2000. Pax believes that Winemaking begins, first and foremost, in the vineyard. The minimal, classic style of winemaking they practice can only produce great wines when the fruit they receive is balanced and healthy. The organic, sustainable, and biodynamic practices of the vineyards they source from are the foundation for everything that follows. They incorporate foot crushing, native yeasts, and emphasize minimal impact in order for the terroir where the wines come from to shine through. In fact, Pax's mission to create quality products with a light touch on our environment extends beyond just the wine in the bottle. All of the materials for their packaging comes from companies who share their commitment to sustainability. They are considered a small winery, and are proud to champion independent vineyards where they can make the best decisions for their vines and the environment.
