ABOUT THIS WINE

This Chablis is produced from vineyards located on slopes benefiting from a mainly south, southwest sun exposure in villages of the Northwestern part of the Chablis area (Lignorelles, Beine, Villy and Chablis). Grapes are machine harvested at full maturity, then pressed via a pneumatic press. Fermentation occurs in temperature controlled stainless steel tanks for 8-10 days. Wines go through malolactic fermentation before aging on the lees for 3 months more than Petit Chablis. Finally, wines are racks with fining, only if necessary, with cold stabilization. Filtration right before bottling.

ABOUT THIS PRODUCER

Domaine Courtault Michelet is a family estate created in 1984 - Stéphanie and Vincent Michelet are the second generation at the head of the estate. The family owns 27ha of vineyards, which are dispersed over 5 different villages in the Chablis area: Beine, Lignorelles, Villy, Maligny and Chablis + a vine of pinot noir in Epineuil (20 km far East from Chablis). Ocrer two generations, they planted all their plots, except the Vieilles Vignes (60 years old). The preservation of the environment has always guided the family in the choices regarding the management of their vineyard. They favor plowing and grassing contours and tractor passages to respect the biodiversity. Vine cultivation is based on observation of the vineyard and weather data, with the goal of reducing inputs. 

Both graduates in agronomy and oenology, Stéphanie and Vincent strive to craft wines that allow the terroir to fully express itself. The goal is to preserve freshness, while maintaining a beautiful aromatic palette and body to allow the wines to age well and be appreciated after a few years. They favor long aging periods on fine lees, primarily in stainless steel vats.
