ABOUT THE WINE
“Carte d’Or” is the signature cuvée of Drappier, composed predominantly of Pinot Noir, which gives the wine its distinctive depth, structure, and fruit-forward character—uncommon for many Champagnes that lean more heavily on Chardonnay. The nose opens with orchard fruits, quince, and hints of freshly baked bread, while the palate reveals a supple texture, fine bubbles, and a harmonious balance between ripeness and freshness.
Sourced primarily from the Aube subregion, particularly around Urville, the vineyards benefit from Kimmeridgian limestone soils similar to those of Chablis, lending minerality and precision. The estate practices low-intervention viticulture, with a strong emphasis on sustainable and organic farming methods. Sulfur use is minimal, and some reserve wines are aged in large oak casks, contributing subtle complexity without overt wood influence.
Vinification focuses on preserving fruit purity and terroir expression, with a portion of the blend undergoing malolactic fermentation to soften acidity. The wine is aged on lees to enhance texture and aromatic depth.
Food Pairings: Exceptionally versatile—pairs beautifully with roast chicken, duck, mushroom dishes, soft cheeses, or even richer seafood like lobster and scallops.
