The name "Kalkspitz" reflects the limestone ("kalk") soils of the area and the wine's characteristic spritz ("spitz"). Fermentation begins in oak barrels and is completed in the bottle without disgorgement, adhering to the ancestral method of sparkling wine production. Christoph Hoch represents the 12th generation of winemakers in his family, with a lineage dating back to 1640 in Hollenburg, situated on the south side of the Danube River. In 2013, he established his own winery, focusing on biodynamic and organic practices to authentically express the unique terroir of his homeland. Christoph's innovative approach and dedication to traditional methods have positioned him as a notable figure in the natural wine movement, particularly for his expertise in crafting distinctive sparkling wines like the "Kalkspitz" Pét-Nat.
