ABOUT THIS WINE
“Trois Contrées” (Three Regions) is a single-vintage, multi-parcel cuvée composed of 100% Pinot Noir from three villages in the Côte des Bar: Bar-sur-Seine, Merrey-sur-Arce, and Gyé-sur-Seine. These sites offer a complex interplay of Kimmeridgian and Portlandian limestone soils, contributing to the wine’s mineral edge and structural clarity.
Fermentation is carried out with indigenous yeasts, and a portion of the wine is vinified in oak barrels for added texture. Aged on the lees for around 30–36 months and finished with a low dosage (Extra Brut, ~2–3 g/L), the wine is dry, focused, and layered. It’s ideal with oysters, sashimi, or aged cheeses like Comté.
