ABOUT THIS WINE
A blend of 40% Pinot Noir, 40% Chardonnay, and 20% Aligoté from vines that average 20 to 50 years in age. The fruit is sourced from Côte de Beaune, Côte de Nuits, and Hautes Côtes de Beaune.
Whole cluster pneumatic pressing, alcoholic and malolactic fermentation in stainless steel tank, unfined, unfiltered. Liqueur de tirage & liqueur d'expédition: homemade with own base wine and cane sugar. Riddling by hand. The wine rests sur lie for about 36 months. Disgorged at least 60 days before shipment.

Parigot & Richard has been producing fine Crémant in Burgundy for five generations, and remains one of the very few domaines that focuses exclusively on these wines. Located in Savigny-lès-Beaune, with vineyards in both the Côte de Nuits and the Côte de Beaune, Parigot is today directed by Grégory Georger, the current generation’s torchbearer. He adheres precisely in every respect to the traditional Méthode Champenoise, from hand-harvesting, pressing and fermentation, even hand-riddling.
