“Grains de Celles” is drawn from sustainably farmed vineyards in Celles-sur-Ource, Côte des Bar—a region prized for its Kimmeridgian marl soils. The cuvée typically includes 50% Pinot Noir, 25% Chardonnay, and 25% Pinot Blanc, a rare varietal in Champagne that lends roundness and floral lift. Fermented and aged entirely in stainless steel, with malolactic fermentation completed, the wine rests on its lees for around 30 months before disgorgement. The Extra Brut dosage allows the vibrant citrus, orchard fruit, and chalk-driven minerality to shine through. In magnum, the wine gains additional textural richness and aging capacity, making it a stellar companion for celebratory meals—think shellfish towers, roasted poultry, or aged cheeses.
