Crafted from 85% Assyrtiko and 15% Aidani, the grapes for this Vinsanto are hand-harvested and sun-dried on mats for 10–14 days, intensifying sugars and flavor. After gentle pressing, the must undergoes a slow, natural fermentation before aging for at least 4 years in old oak barrels—without racking—to develop depth and oxidative complexity. The result is a layered dessert wine with aromas of dried fruit, roasted coffee bean, clove, and burnt sugar, with a palate that balances sweetness with a vibrant spine of minerality and acidity—a hallmark of Santorini’s ancient, volcanic terroir. Serve with blue cheese, walnut baklava, or dark chocolate tart for a transcendent pairing.

SantoWines is a cooperative founded in 1947 and represents the collective heritage of Santorini’s winegrowers, dedicated to preserving the island’s unique viticultural identity. Working exclusively with native grapes grown on ungrafted bush vines—many over 60 years old and cultivated in the island’s iconic kouloura basket training system—SantoWines practices sustainable, low-intervention farming on volcanic soils. Their winemaking respects centuries-old traditions while embracing modern precision, especially in their Vinsanto, a wine synonymous with Santorini’s ecclesiastical and maritime history.
